Ingredients

  • 1 1/2 cups vanilla-flavored cultured coconut milk
  • 1 cup steel-cut oats
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 ounce fresh blueberries

Instructions

  1. Stir coconut milk, oats, chia seeds, lemon zest, and vanilla extract together in a bowl. Cover the bowl with plastic wrap and refrigerate, 8 hours to overnight.
  2. Heat oats mixture in the microwave until warmed-through, about 1 minute. Top with blueberries.
