Pasta with Chicken, Tomato, and Feta - PCOS-Friendly Recipe

Ingredients
- Coarse salt
- ground pepper
- 12 oz. ditalini or other small tubular pasta
- 2 tbsp. olive oil
- 3 tbsp. fresh lemon juice
- 1 c. crumbled feta cheese
- 1 lb. plum tomatoes
- 3 c. shredded, cooked rotisserie chicken
- 1 c. Torn fresh basil leaves
Instructions
- In a large pot of boiling salted water, cook pasta until al dente, according to package directions. Drain; rinse well under cold water.
- Transfer to a large bowl; toss with oil, lemon juice, feta, tomatoes, chicken, and basil; season generously with salt and pepper. Serve at room temperature or chilled.
