Chilled Avocado-Cucumber Soup - PCOS-Friendly Recipe

Ingredients
- 1 English cucumber
- 1 avocado
- 1/2 tsp. finely grated lemon zest
- 1/4 c. coarsely chopped fresh cilantro
- 1 scallion
- 1 jalapeno
- 1 c. nonfat plain yogurt
- 1 c. cold water
- 1 1/2 tsp. Coarse salt
- 1/4 tsp. Freshly ground pepper
- 1 tbsp. fresh lemon juice
Instructions
