Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup orange juice
  • 1/4 cup canola oil
  • 2 tablespoons beaten egg
  • 1/3 cup dried cranberries
  • 1/4 cup miniature semisweet chocolate chips
  • 1/4 cup chopped walnuts

Instructions

  1. In a large bowl, combine the flour, sugar, baking powder and salt. In another bowl, whisk the orange juice, oil and egg; stir into dry ingredients just until moistened. Fold in the cranberries, chocolate chips and walnuts.
  2. Coat muffin cups with cooking spray or use paper liners; fill two-thirds full with batter. Combine the topping ingredients; sprinkle over muffins. Bake at 375 ° for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.
