Ingredients

3/4 cup jasmine rice 1 tsp minced garlic 4 lemon slices 1 fl oz fresh lemon juice 8 oz boneless salmon 1 tsp yellow mustard 1 tbsp drained capers 1 cup cucumber, sliced

Instructions

1. Marinate partially frozen salmon filet in yellow mustard, chopped capers, garlic, lemon juice, and lemon slices until defrosted or overnight in fridge. Bring salmon to room temperature and rinse off marinade and dry before cooking. 2. Start rice before salmon. Cook salmon on medium-high heat until desired doneness. 3. Serve salmon with cucumbers and rice.
