Ingredients

juice of 2 limes 1 cup part-skim shredded mozzarella cheese 4 green hot chili peppers, roasted 1 lb boneless skinless chicken breast

Instructions

1. Preheat oven to 400 °F (205 °C).. 2. Arrange chicken in a 9"x13" baking dish; pour lime juice evenly over chicken. Season with salt and pepper (or if desired you can use taco seasoning). 3. Lay one roasted green chili over each chicken breast. Cover dish with foil; bake for 30 minutes. 4. Sprinkle cheese evenly over chicken; bake uncovered an additional 5 minutes or until cheese melts.
