Cilantro Lime Chicken - PCOS-Friendly Recipe

Ingredients
- 1 1/2 lb boneless skinless chicken breasts
- 2 tablespoons Old El Paso™ taco seasoning mix (from 1-oz package)
- 1 jar (16 oz) green tomatillo salsa (salsa verde)
- 1 lime
- 1/4 cup chopped fresh cilantro
- 1/2 cup sour cream
- Hot cooked rice
Instructions
- Spray 3- to 4-quart slow cooker with cooking spray. Place chicken in slow cooker. Sprinkle taco seasoning over chicken; pour salsa over chicken.
- Cover; cook on Low heat setting 6 to 8 hours. About 30 minutes before serving, squeeze lime over chicken. Stir in cilantro.
- Using 2 forks, shred chicken in slow cooker. Stir in sour cream. Serve chicken over rice. Garnish with additional cilantro, if desired.
