Ingredients

Streusel 2 cups flour 1/2 cup granulated sugar 1/3 cup packed brown sugar 1 cup (4 ounces) marcona almonds, roughly chopped 1/2 teaspoon ground cinnamon Salt 10 tablespoons unsalted butter, melted Cake 3 1/2 tablespoons unsalted butter, melted, plus more for the pan 3/4 cup plus 2 tablespoons flour 3/4 teaspoon baking powder 1/2 teaspoon kosher salt 2 large eggs 1/2 cup granulated sugar Finely grated zest of 1 lemon 1/3 cup extra-virgin olive oil 1 tablespoon plus 1 1/2 teaspoons whole milk 1 1/2 teaspoons fresh lemon juice

Instructions

Combine the flour, granulated sugar, brown sugar, almonds, cinnamon, and 1/2 teaspoon salt in the bowl of an electric mixture fitted with the paddle attachment. Mix just to combine. Add the butter and mix just until the streusel comes together. Spread onto a baking sheet and chill in the refrigerator until firm, about 1 hour. Crumble the streusel with your fingers and store in an airtight container in the refrigerator or freezer until ready to use.
