Ingredients

1/2 pound red or white dried cargamanto beans (1 1/4 cups), picked over and rinsed 4 garlic cloves 1/3 cup fresh lemon juice 1/2 cup extra-virgin olive oil 3/4 pound green beans, cut into 2-inch pieces 3 celery ribs, sliced 1/8 inch thick 1/3 cup coarsely chopped flat-leaf parsley leaves

Instructions

Cover cargamanto beans with water by 2 inches in a medium pot. Bring to a boil, then boil 1 minute. Remove from heat and cover, then soak 1 hour. Drain, discarding water.
