1 cup shredded cheddar cheese 1/2 tsp ground cumin 1/2 tsp cayenne pepper 1 lb chicken breast, cut in cubes 1/2 cup bbq sauce 12 leaves inner lettuce 1 medium red onion, sliced 1 medium green pepper, sliced thick strips 1 1/2 cups sliced yellow squash, thick slices

Instructions

1. Spray large skillet with cooking spray. Add chicken and cook until no longer pink. 2. Add all remaining ingredients except lettuce and cheese. Cook 6-8 minutes until chicken and vegetables are tender. 3. Top with cheese. Add mixture to empty lettuce leaves. Wrap. 4. Add sour cream if desired.
