A low fat veggie quiche version that still packs in the flavor.
Ingredients
6 large eggs
1 1/2 cups shredded low fat cheddar cheese
1/2 cup low fat half and half cream
1 tbsp pepper
1/4 tsp cayenne pepper
1 tsp salt
3 cups broccoli
Instructions
1. Pre-heat oven to 375° F (200° C).
2. Par cook brocolli by steaming.
3. Spray 9" pie plate and spread cooked brocolli in bottom.
4. Sprinkle with shredded cheese.
5. In large bowl combine remaining ingredients stirring with a whisk until well blended.
6. Pour egg custard mixture over brocolli and cheese.
7. Bake in pre-heated oven for 35 minutes until firm.
