Recipe by Cutie Save time without the hassle of dipping individual pieces and frying on the stove top. Any kind of sandwich bread will work, and you can add any fruit or cream cheese. I used bananas because it's what I had on hand.

Ingredients

  • 8 eggs
  • 1 3/4 cups milk
  • 1/3 cup brown sugar
  • 1/4 cup butter, melted
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 12 slices wheat bread, cubed
  • 2 bananas, sliced

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease 9x13-inch baking dish.
  2. Whisk eggs, milk, brown sugar, butter, vanilla extract, ground cinnamon, and ground nutmeg together in a bowl. Stir bread cubes and bananas into egg mixture until coated; pour into prepared baking dish.
  3. Bake in preheated oven until a knife inserted in center comes out clean, 35 to 40 minutes.

PCOS-Friendly Foods in This Recipe

This recipe contains the following foods that may benefit PCOS management: Cinnamon.

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly.
