This special Sunday French Toast is stuffed with a deluxe "cheese Danish" filling, and the process is so simple, the kids can help out. Currants, dried cherries, or even chocolate chips can be stirred into the filling.

Ingredients

  • 1 c. part-skim ricotta cheese
  • 6 tbsp. sugar
  • 1/2 c. pecans or walnuts
  • 1/3 c. raisins
  • 1 tsp. vanilla
  • 4 slice challah bread
  • 2 eggs
  • 1 c. milk
  • 1 tbsp. unsalted butter
  • 1 tbsp. vegetable oil

Instructions

  1. In medium bowl, stir together ricotta, 3 tablespoons sugar, nuts, raisins, and vanilla until combined.
  2. With small, sharp knife, make a pocket in each piece of bread by cutting a horizontal slit along the bottom edge of piece.
  3. Spoon ricotta filling into pockets, dividing it evenly; press edges of bread together gently to enclose filling.
  4. In large, shallow bowl, lightly beat eggs and milk together. Dip stuffed bread into egg mixture, coating sides completely, absorbing all egg mixture.
