Lemon-Coconut-Almond Haroset - PCOS-Friendly Recipe

Ingredients
- 4 tsp. sugar
- 1 tsp. grated lemon rind
- 1 tbsp. fresh lemon juice
- 3 Gala apples
- 1 Granny Smith apple
- 1/2 c. coarsely chopped almonds
- 1 1/2 tbsp. dried coconut chips (such as Melissa's)
- Fresh parsley sprigs
Instructions
- Combine sugar, rind, juice, and apples in a large bowl. Stir in almonds and coconut. Cover and refrigerate 2 hours. Garnish with parsley, if desired.
