Instructions
1. Spiralize the zucchinis into noodles. 2. In a food processor, combine the avocado, basil, garlic, lemon juice, and olive oil. Process until smooth. 3. Season the avocado pesto with salt and pepper. 4. Toss the zucchini noodles with the avocado pesto. 5. If desired, toast the pine nuts in a dry skillet over medium heat until golden brown. 6. Sprinkle the pine nuts over the zucchini noodles. 7. Serve immediately.
