Instructions
- Preheat oven to 450 degrees. Unwrap beef and allow to come to room temperature as oven preheats.
- Season the meat with onion soup mix, making sure to cover all exposed sides. Place in a roasting pan, fattiest side up.
- Roast for 15 minutes to sear the outside. Then lower the heat to 350, and continue to cook for roughly 2 hours (15 minutes a pound total), until meat is medium rare and the internal temperature reads 120 degrees when taken with a meat thermometer.
- Allow the meat to rest for about 10 minutes draped with aluminum foil before slicing.
