8 lb. standing rib roast 1 packet onion soup mix, like Lipton's Recipe Secrets

Instructions

Preheat oven to 450 degrees. Unwrap beef and allow to come to room temperature as oven preheats. Season the meat with onion soup mix, making sure to cover all exposed sides. Place in a roasting pan, fattiest side up. Roast for 15 minutes to sear the outside. Then lower the heat to 350, and continue to cook for roughly 2 hours (15 minutes a pound total), until meat is medium rare and the internal temperature reads 120 degrees when taken with a meat thermometer. Allow the meat to rest for about 10 minutes draped with aluminum foil before slicing.
