Ingredients
- 1 stick unsalted butter
- 1/2 c. sugar
- 1/4 tsp. salt
- 1 large egg
- 1 tbsp. light corn syrup
- 1 tbsp. grated lemon zest
- 2 tsp. vanilla
- 2 1/4 c. all-purpose flour
- 4 x 2-in. dove-shaped cookie cutter
- Blue, white cookie decorating icings
Instructions
- In a large bowl, beat butter, sugar and salt with mixer on medium-high until light and fluffy, about 3 minutes.
- Reduce speed to medium and add egg; beat until combined. Beat in corn syrup, lemon zest and vanilla. Reduce speed to low and add flour in 2 batches. Shape dough into 2 disks; wrap and refrigerate 1 hour.
- Heat oven to 350 ºF. Roll out 1 disk at a time between 2 sheets of wax paper to 1 ⁄4 in. thick. Remove top layer of wax paper and cut out shapes using cookie cutters. Transfer to a baking sheet and bake for 12 minutes or until cookies are golden. Remove cookies to wire rack to cool completely.
- Apply a blue icing dot for eye. Decorate as desired using white icing.
