Bow Ties with White Beans and Broccoli - PCOS-Friendly Recipe

Ingredients
- 1 lb. box bow-tie pasta
- 1 tbsp. olive oil
- 1 head broccoli
- 1 clove garlic
- 2 c. low-sodium chicken broth
- 1 can cannellini or other white beans
- 1 tsp. grated lemon zest
- 1 tbsp. fresh lemon juice
- 1/3 c. grated Parmesan cheese
Instructions
- Cook pasta according to package directions. Drain the pasta and return it to the pot.
- Meanwhile, heat the oil in a large skillet over medium heat. Add the broccoli and cook, tossing occasionally, for 3 minutes. Add the garlic and cook, tossing, for 1 minute.
- Add the broth and simmer, stirring occasionally, until the broccoli is just tendner, 2 to 3 minutes more. Add the beans, lemon zest and juice and cook until heated through, 2 minutes.
- Toss the pasta with the broccoli and bean mixture and serve with the cheese.
