A versatile leek soup that you can be creative with and add your favorite vegetables.
Ingredients
2 tbsps olive oil
1/2 cup sour cream
1/2 cup 1% milk
3 tbsps butter
4 cups chicken broth
2 cups chopped broccoli
1 cup chopped carrots
2 cups cauliflower
3 cloves garlic
2 leek
1 cup pieces or slices mushrooms
1/3 cup green peas
2 cups water
Instructions
1. Clean all vegetables and slice leeks into 1" to 1/2" pieces. Chop broccoli and cauliflower. Finely chop garlic cloves.
2. Heat olive oil and butter in a large stock pot, then saute leeks, garlic, broccoli, cauliflower and carrots for 10 minutes.
3. Add chicken (or vegetable) broth, plus 2 cups of water to the pot.
Add 1/2 cup each of sour cream and 1% milk. Puree soup with a blender or mixer and salt and pepper to taste. Enjoy!!!
4. Bring to a boil, then simmer for 45 minutes.
