Betty demonstrates how to make Peanut Butter-Chocolate Snack Mix. This is a quick and easy-to-make snack mix that can be enjoyed by everyone while watching the Playoffs, the Super Bowl, or other sports events. Kids love it, too!
Peanut Butter Chocolate Snack Mix
2 ½ cups square rice cereal (Rice Chex)
1 ½ cups crispy corn cereal (Kix)
1 cup small pretzels
¼ to ½ cup sugar or artificial sweetener (I used ¼ cup sugar, and it was perfect for my family.)
½ cup semi-sweet chocolate chips
¼ cup peanut butter
2 tablespoons butter, softened
½ teaspoon vanilla extract
Place rice cereal, corn cereal, pretzels, and sugar in a gallon-sized Ziploc bag. Set aside. In a small bowl, melt chocolate chips, peanut butter, and butter in microwave oven, set to LOW power for a few 30-second intervals, stirring after each interval, until mixture is smooth. Stir in vanilla. Allow mixture to cool slightly. Add peanut butter-chocolate mixture to cereal mixture. Close the top of the bag and work chocolate mixture into cereal mixture by pressing and squeezing the outside of the bag. When peanut butter-chocolate mixture completely covers cereal mixture, pour the mixture out onto a shallow baking pan to dry. You may speed up the drying process by refrigerating the snack mixture. When the snack mixture is dry to the touch, place it in chunks or individual pieces in a nice serving dish. Serve as desired. Delicious!!!
