Ingredients

2 cups egg whites 1 package frozen spinach 6 oz monterey cheese 2 tbsps salsa 1/4 cup 2% milk 1 tsp olive oil

Instructions

1. Pour olive oil into a quiche pie plate. Spread with a paper towel to coat pie plate and remove excess oil. 2. Thaw and drain spinach and mix all ingredients together. 3. Bake 350 °F (175 °C) for about 40 minutes or until center sets. 4. Cool and cut into 6 wedges.
