2 boneless pork chops, 1 cup of spinach, 1/2 cup of smoked gouda cheese, 2 tablespoons of olive oil, salt and pepper to taste
Instructions
1. Preheat the oven to 375°F (190°C). 2. Cut a pocket into each pork chop for stuffing. 3. Sauté the spinach in 1 tablespoon of olive oil until wilted. 4. Mix the wilted spinach with the smoked gouda cheese. 5. Stuff each pork chop with the spinach and cheese mixture. 6. Heat the remaining olive oil in a pan over medium heat. 7. Sear the pork chops on each side until golden brown. 8. Transfer the pork chops to the oven and bake for 15 minutes or until cooked through.
