  • 1/2 cup unsweetened cocoa powder (50g)
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 1/4 cup coconut oil (60ml)
  • 1/2 cup erythritol (100g)
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini (200g)
  • 1/2 cup sugar-free chocolate chips (90g)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix together the almond flour, cocoa powder, salt, and baking soda.
  3. In another bowl, whisk together the eggs, coconut oil, erythritol, and vanilla extract.
  4. Gradually add the dry ingredients into the wet ingredients, mixing well.
  5. Stir in the grated zucchini and chocolate chips.
  6. Pour the batter into a lined 8x8 baking dish.
  7. Bake for 25-30 minutes, or until a toothpick comes out clean.
  8. Allow to cool before cutting into squares.
