Ingredients

2 medium zucchinis (about 1 lb/450g), 1/2 lb (225g) thinly sliced beefsteak, 1/2 cup (75g) diced bell peppers, 1/2 cup (75g) diced onions, 1/2 cup (50g) shredded provolone cheese, 1 tbsp (15ml) olive oil, Salt and pepper to taste

Instructions

1. Preheat oven to 400F (200C). 2. Cut zucchinis in half lengthwise and scoop out the center to create boats. 3. In a pan, heat olive oil over medium heat. Add beefsteak and cook until browned. 4. Add bell peppers and onions, cook until softened. 5. Fill each zucchini boat with the beef and vegetable mixture. Top with shredded provolone. 6. Bake for 15-20 minutes, or until zucchini is tender and cheese is melted.
