Ingredients
1 cup kale (chopped, 67g), 1 cup mushrooms (sliced, 70g), 1/2 onion (chopped, 58g), 4 eggs, 1/2 cup almond milk (120ml), 1/2 cup cheddar cheese (shredded, 57g), 1 pre-made whole wheat pie crust, salt and pepper to taste
Instructions
1. Preheat oven to 375F (190C). 2. Sauté onions, mushrooms, and kale until tender. 3. In a separate bowl, whisk together eggs, almond milk, salt, and pepper. 4. Spread the sautéed vegetables evenly on the pie crust. 5. Pour the egg mixture over the vegetables. 6. Sprinkle cheese on top. 7. Bake for 30-35 minutes or until the quiche is set and lightly browned.
