Ingredients

1 lb firm tofu, cubed 1 large sweet potato, peeled and diced 1 cup chopped spinach 1 cup diced tomatoes 1/2 cup diced carrots 1/2 cup diced celery 1/4 cup pumpkin seeds 4 cups vegetable broth 1 tbsp olive oil 1 tbsp soy sauce 2 cloves garlic, minced 1 tsp ground cumin 1 tsp ground turmeric Salt and pepper to taste

Instructions

1. Add the olive oil, minced garlic, ground cumin, and ground turmeric to the crockpot. 2. Add the cubed tofu to the crockpot. 3. Add the diced sweet potato, chopped spinach, diced tomatoes, diced carrots, and diced celery. 4. Pour in the vegetable broth and soy sauce, and stir to combine. 5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender. 6. Stir in the lemon juice and season with salt and pepper to taste. 7. Before serving, toast the pumpkin seeds in a small skillet over medium heat for 2-3 minutes until lightly browned. 8. Ladle the stew into bowls and sprinkle with toasted pumpkin seeds. 9. Serve hot and enjoy.
