- 1 lb firm tofu, cubed
- 1 large sweet potato, peeled and diced
- 1 cup chopped spinach
- 1 cup diced tomatoes
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/4 cup pumpkin seeds
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground turmeric
- Salt and pepper to taste
Instructions
- Add the olive oil, minced garlic, ground cumin, and ground turmeric to the crockpot.
- Add the cubed tofu to the crockpot.
- Add the diced sweet potato, chopped spinach, diced tomatoes, diced carrots, and diced celery.
- Pour in the vegetable broth and soy sauce, and stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.
- Stir in the lemon juice and season with salt and pepper to taste.
- Before serving, toast the pumpkin seeds in a small skillet over medium heat for 2-3 minutes until lightly browned.
- Ladle the stew into bowls and sprinkle with toasted pumpkin seeds.
- Serve hot and enjoy.
