Ingredients

1 cup biscuit baking mix 1/2 cup grated Parmesan cheese 1/2 cup shredded mozzarella cheese 1 tablespoon minced fresh parsley 1 1/2 teaspoons dried oregano 1 1/2 teaspoons dried basil 1/2 teaspoon salt 4 eggs 1/2 cup vegetable oil 1 small onion, chopped 3 zucchini, grated 1/2 cup chopped pepperoni

Instructions

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish. Combine biscuit mix, Parmesan cheese, mozzarella cheese, parsley, oregano, basil, and salt in a bowl. Mix eggs, oil, and onion in a bowl. Stir biscuit mixture into egg mixture until just combined; fold in zucchini and pepperoni. Transfer to baking dish. Bake in preheated oven until golden brown and set, 30 to 35 minutes. Allow to cool slightly and cut into squares.
