Instructions

  1. Grate peel from 1 lemon into large bowl. Squeeze lemon juice into medium bowl, stir in shredded carrots, chopped basil, mayo, Dijon mustard, and a pinch of salt.

  2. In processor, pulse 1 1/4 pounds cleaned shrimp until chopped, stirring occasionally. Transfer three-fourths of shrimp to bowl with peel; process remaining until mostly smooth and add to same bowl.

  3. Add crushed garlic, smoked paprika, 1/4 cup Italian bread crumbs, and 1/4 teaspoon each salt and pepper. Gently mix with hands; shape into twelve 1/2-inch-thick patties and coat with 1/2 cup bread crumbs.

  4. In 12-inch skillet, heat oil on medium-high until hot. Cook patties, in batches, 2 minutes per side or until cooked through, adjusting heat as necessary. Serve on slider buns with carrot slaw.

Why this Spicy Shrimp Sliders works for PCOS

Evening meals affect overnight insulin and morning blood sugar more than most women realise. Keeping dinner protein-forward and finishing eating at least 2-3 hours before bed gives your body time to clear glucose before the overnight fast, which improves morning fasting insulin readings.

PCOS-Friendly Foods in This Recipe

Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Lemons are also rich in vitamin C, flavonoids, and other antioxidants.
