Ingredients

  • 1 egg, beaten
  • italian breadcrumbs
  • 1 lb. chicken breasts, sliced thinly
  • Jarlsberg light cheese
  • spinach
  • Parmesan, for serving

Instructions

  1. Preheat oven to 350 degrees F.
  2. Place egg and breadcrumbs in two separate bowls. Dip chicken in egg, then breadcrumbs. Place generous slices of Jarlsberg and handfuls of spinach in center of each chicken breast. Roll up chicken and stick with toothpick to keep together. Season with salt and pepper.
  3. Cook for 25 minutes. Remove from oven and sprinkle with parmesan; cook for 5 more minutes.
