Ingredients

1 c. Silvana's Kitchen Gluten-Free All-Purpose Flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. ground cinnamon 1/4 tsp. salt 1 c. light brown sugar 1/4 c. sour cream 4 tbsp. unsalted butter 1 large egg 2 tsp. pure vanilla extract 2 medium carrots 1/2 c. walnuts 1 c. heavy cream 2 tbsp. confectioners' sugar 1/4 c. whipped cream cheese warm maple syrup

Instructions

Preheat oven to 200 degrees F and set a rack in a rimmed baking sheet. In a medium bowl, whisk flour with baking powder, baking soda, cinnamon, and salt. In a large bowl, whisk brown sugar with sour cream, butter, egg, and 1 teaspoon of vanilla. Using a wooden spoon, stir in dry ingredients, then stir in carrots and walnuts. Preheat a waffle iron and brush with butter. Scoop 1/3 cup of batter into center of iron, spreading batter with the back of a spoon. Close iron and cook until waffle is deeply golden and crispy, about 5 minutes. Transfer waffle to rack in oven. Repeat with remaining batter. Meanwhile, in a medium bowl, using a handheld electric mixer, beat heavy cream at medium speed until soft peaks form. Reduce speed to low and beat in confectioners' sugar, cream cheese, and remaining 1 teaspoon of vanilla until firm peaks form. Serve waffles with whipped cream and maple syrup.
