Want an easy way to bake up flaky scrod fillets? Top them with lots of garlicky bread crumbs.

Ingredients

  • 2 tbsp. butter or margarine
  • 1 clove garlic
  • 1 c. fresh bread crumbs
  • 4 piece scrod or cod fillet
  • 2 tbsp. fresh lemon juice
  • 1/2 tsp. salt
  • 1 tbsp. chopped fresh parsley
  • Lemon wedges

Instructions

  1. Preheat oven to 450 degrees F. In 10-inch skillet, melt butter over medium heat. Add garlic; cook until golden. Add bread crumbs and cook, stirring frequently, until lightly toasted. Remove skillet from heat.
  2. With tweezers, remove any bones from scrod. In 13-inch by 9-inch baking dish, arrange fillets in single layer; sprinkle with lemon juice and salt. Press bread-crumb mixture onto fillets. Bake until fish is just opaque throughout, 10 to 15 minutes.
  3. Sprinkle scrod with parsley and serve with lemon wedges. Makes 4 main-dish servings. Nutritional information is based on one serving.
