Ingredients
- 3/4 c. fat- and cholesterol-free egg product
- 1/2 c. 1% lowfat milk
- 3 tbsp. all-purpose flour
- 1/4 c. sugar
- 2 tbsp. cold trans-fat-free spread (found in dairy section)
- 1/2 tbsp. Unsweetened cocoa powder
- 1 tsp. vanilla extract
- 1/4 tsp. salt
- 1/3 c. vanilla extract
Instructions
- Coat a 10-in. nonstick skillet with nonstick spray
- Process first 8 ingredients in blender or food processor to blend
- Heat skillet over medium heat, add scant 1 ⁄4 cup batter and tilt to spread over bottom of pan. Cook 2 minutes or until underside is lightly browned. Flip crêpe over; cook 30 seconds. Place on a plate. Repeat with rest of batter, stacking crêpes
- Fold crêpes in quarters and place 2 on each plate. Serve with frozen yogurt.
