Ingredients

  • 3/4 c. fat- and cholesterol-free egg product
  • 1/2 c. 1% lowfat milk
  • 3 tbsp. all-purpose flour
  • 1/4 c. sugar
  • 2 tbsp. cold trans-fat-free spread (found in dairy section)
  • 1/2 tbsp. Unsweetened cocoa powder
  • 1 tsp. vanilla extract
  • 1/4 tsp. salt
  • 1/3 c. vanilla extract

Instructions

  1. Coat a 10-in. nonstick skillet with nonstick spray
  2. Process first 8 ingredients in blender or food processor to blend
  3. Heat skillet over medium heat, add scant 1 ⁄4 cup batter and tilt to spread over bottom of pan. Cook 2 minutes or until underside is lightly browned. Flip crêpe over; cook 30 seconds. Place on a plate. Repeat with rest of batter, stacking crêpes
  4. Fold crêpes in quarters and place 2 on each plate. Serve with frozen yogurt.
