Ingredients
- 12 bamboo skewers
- 1 lb. pork, cut into 1" cubes
- 3 garlic cloves
- 1 lb. cremini mushrooms, cleaned and cut in half lengthwise
- 3 medium zucchini, cut into 1/2" rounds
- 1 lb. pearl onions
- extra-virgin olive oil
- kosher salt
- Freshly ground black pepper
- 1 1" piece ginger, peeled and chopped
- 1/2 c. creamy peanut butter
- 2 tbsp. soy sauce
- 2 tbsp. fresh lime juice
- 1 tbsp. sugar
- 1 tsp. white vinegar
- 1/4 c. chopped scallions
Instructions
- Preheat oven to 375 degrees F. In a rimmed sheet pan, soak bamboo skewers in water. Meanwhile, in a large mixing bowl add pork cubes, mushrooms, zucchini, pearl onions, 2 grated garlic cloves, and 2 tablespoons olive oil; season with salt and pepper and massage by hand. Alternate sliding pieces of pork and vegetables on each skewer and place on rimmed baking sheet. Bake until golden brown, about 25 minutes.
- In the bowl of a food processor add ginger, 1 chopped garlic clove, peanut butter, soy sauce, lime juice, sugar, and vinegar. Pulse until smooth and set aside.
- Transfer skewers to plates and drizzle with peanut sauce and garnish with scallions.
