Ingredients

  • 1/2 cup mayonnaise
  • 2 teaspoons curry powder
  • 1 tablespoon lemon juice
  • 4 cups cooked turkey, diced
  • 1/2 cup pecans, toasted and chopped
  • 1/2 cup dried cranberries
  • 1/2 cup scallions, green and white parts, chopped

Instructions

  1. In a large mixing bowl stir the mayo, curry powder and lemon juice until smooth.
  2. Add the turkey, pecans, cranberries and scallions. Gently fold to combine.
  3. Season as desired with salt and pepper.
