Recipe by Jean-Michel Cohen The ever-popular deviled egg trims down with a filling that includes yogurt, parsley, and lemon juice in place of traditional mayonnaise.

Ingredients

  • 1 medium hard-boiled egg
  • 1 tsp. canola oil
  • 1 tsp. chopped parsley
  • 1/3 c. plain nonfat yogurt
  • Pepper
  • 1 tsp. lemon juice
  • lettuce leaves

Instructions

  1. Cut the boiled egg lengthwise and remove the yolk. Mash egg yolk with canola oil, parsley, yogurt, and salt and pepper. When everything is well blended, pour the lemon juice inside the boiled egg white and top with yolk mixture. Serve chilled on a bed of salad.
