Ingredients

3 1/2 tbsp extra virgin olive oil 1 tbsp soy sauce 1 tsp sugar 2 large eggs 2 cups cooked, diced pork 1/2 tsp pepper 1 tsp salt 1 clove garlic 1 tbsp chopped green onion 1 cup chopped or sliced tomato 1 cup cooked rice

Instructions

1. Beat eggs in a small bowl. 2. Heat 1/2 tbsp olive oil in hot wok, scramble eggs, and reserve. 3. In wok, add remainder of olive oil, onion, garlic, and pork. Cook until browned. 4. Add tomato, sugar, pepper, and salt. Add rice and mix well. Cook for 6-8 minutes. 5. Add eggs and soy sauce, mix well. 6. Note: pork can be substituted with chicken or beef.
