4 fillets boneless skinless chicken breast 1/4 cup egg beaters 1/2 cup Italian style bread crumbs 2 tsp Dijon mustard 1/2 cup reduced fat parmesan cheese

Instructions

1. Pre-heat oven to 375 °F (190 °C) and spray baking pan with cooking spray like Pam. 2. Mix egg and mustard in one bowl and parmesan cheese and bread crumbs in another. 3. Dredge chicken breasts in egg wash and the bread crumb mixture and place on pan. 4. Bake for 25 minutes.
