Recipe by Todd Porter and Diane Cu A simple salad of cucumbers and fresh spearmint comes together perfectly with a lemony, creamy vinaigrette made from Greek yogurt.

Ingredients

1/4 c. extra-virgin olive oil 1 medium lemon 3 tbsp. lemon juice 3 tbsp. Greek yogurt 2 tbsp. shallots 1 tsp. brown sugar 1/2 tsp. Dijon mustard 1/2 tsp. kosher or sea salt Fresh cracked black pepper

Instructions

In a bowl whisk together the vinaigrette ingredients. Chill until ready to serve. Pat the cucumber slices dry between paper towels. Combine with the mint in a large bowl.
