If you're allergic to peanuts, whisk together fish sauce, lime juice, 1 crushed garlic clove and 1 tablespoon brown sugar for a sauce alternative.
Ingredients
1 tbsp. oil
12 oz. skinless, boneless chicken breast, thinly sliced
3 c. red cabbage
1 c. shredded carrots
2 cloves garlic, chopped
1/4 c. cider vinegar
1/4 c. peanut butter (or other nut butter)
1/4 c. soy sauce
1/4 c. chicken broth
8 oz. rice noodles or Chinese egg noodles, cooked
Chopped peanuts
Cilantro leaves
Instructions
In large skillet, heat oil on medium-high. Add chicken, red cabbage, carrots and garlic. Cook 5 minutes.
Whisk together cider vinegar, peanut butter, soy sauce and chicken broth; add to skillet along with noodles.
Top with chopped peanuts and cilantro leaves.
