- 12 oz. skinless, boneless chicken breast, thinly sliced
- 3 c. red cabbage
- 1 c. shredded carrots
- 2 cloves garlic, chopped
- 1/4 c. cider vinegar
- 1/4 c. peanut butter (or other nut butter)
- 1/4 c. soy sauce
- 1/4 c. chicken broth
- 8 oz. rice noodles or Chinese egg noodles, cooked
- Chopped peanuts
- Cilantro leaves
Instructions
- In large skillet, heat oil on medium-high. Add chicken, red cabbage, carrots and garlic. Cook 5 minutes.
- Whisk together cider vinegar, peanut butter, soy sauce and chicken broth; add to skillet along with noodles.
- Top with chopped peanuts and cilantro leaves.
