Ingredients

  • 1/2 lb lean ground turkey (225g)
  • 1/2 cup cauliflower rice (125g)
  • 1/2 cup chopped spinach (30g)
  • 1/4 cup grated Parmesan cheese (25g)
  • 1 egg
  • 4 cups chicken broth (950ml)
  • 1/2 cup chopped carrots (65g)
  • 1/2 cup chopped celery (65g)
  • 1/2 cup chopped onion (65g)
  • 2 cloves garlic, minced, Salt and pepper to taste

Instructions

  1. In a large bowl, combine turkey, cauliflower rice, spinach, Parmesan, egg, salt, and pepper. Mix until well combined. Form into small meatballs and set aside.
  2. In a large pot, sauté carrots, celery, onion, and garlic until softened.
  3. Add chicken broth to the pot and bring to a boil.
  4. Carefully add meatballs to the soup and simmer until cooked through.
  5. Serve hot, garnished with extra Parmesan if desired.
