Ingredients
- 2 medium carrots (peeled and chopped)
- 2 cups of spinach
- 1 onion (chopped)
- 2 cloves of garlic (minced)
- 1 tsp turmeric
- 1 tsp cumin
- 1 tbsp olive oil
- 2 cups vegetable broth, Salt and pepper to taste
Instructions
- Heat the olive oil in a pot.
- Add the onion and garlic, sauté until golden.
- Add the carrots, turmeric, and cumin. Stir well.
- Add the vegetable broth, bring to a boil.
- Simmer for 20 minutes.
- Add the spinach, cook for another 5 minutes.
- Blend until smooth.
- Season with salt and pepper. Serve hot.
