Ingredients

2 medium carrots (peeled and chopped), 2 cups of spinach, 1 onion (chopped), 2 cloves of garlic (minced), 1 tsp turmeric, 1 tsp cumin, 1 tbsp olive oil, 2 cups vegetable broth, Salt and pepper to taste

Instructions

1. Heat the olive oil in a pot. 2. Add the onion and garlic, sauté until golden. 3. Add the carrots, turmeric, and cumin. Stir well. 4. Add the vegetable broth, bring to a boil. 5. Simmer for 20 minutes. 6. Add the spinach, cook for another 5 minutes. 7. Blend until smooth. 8. Season with salt and pepper. Serve hot.
