1 cup cottage cheese (225g), 4 large eggs, 1/2 cup bell peppers (75g), 1/2 cup spinach (30g), 1/2 cup mushrooms (35g), 1/4 cup onions (40g), 1/2 cup cherry tomatoes (75g), 1/2 tsp salt, 1/2 tsp black pepper, 1 tbsp olive oil (15ml)

Instructions

1. Preheat oven to 375°F (190°C). 2. In a bowl, whisk together cottage cheese and eggs. 3. In a skillet, sauté bell peppers, spinach, mushrooms, onions, and cherry tomatoes in olive oil until softened. 4. Add veggies to the egg mixture, season with salt and pepper. 5. Pour the mixture into a greased baking dish. 6. Bake for 20-25 minutes or until set. 7. Let cool for a few minutes before serving.
