Ingredients

1 cup almond flour (US) or 120g (metric), 1/2 cup unsweetened shredded coconut (US) or 40g (metric), 1/4 cup sliced almonds (US) or 30g (metric), 1/4 cup pumpkin seeds (US) or 30g (metric), 2 tablespoons chia seeds (US) or 30g (metric), 1/4 cup honey (US) or 60ml (metric), 1/4 cup coconut oil (US) or 60ml (metric), 1/2 teaspoon vanilla extract (US) or 2.5ml (metric), 1/4 teaspoon salt (US) or 1.5g (metric)

Instructions

1. Preheat your oven to 300F (150C). 2. In a large bowl, mix together the almond flour, shredded coconut, sliced almonds, pumpkin seeds, and chia seeds. 3. In a small saucepan, heat the honey, coconut oil, vanilla extract, and salt until it's all melted and combined. 4. Pour the liquid mixture over the dry ingredients and stir until everything is well coated. 5. Spread the mixture out on a baking sheet lined with parchment paper. 6. Bake for 20-25 minutes, stirring halfway through, until the granola is golden brown. 7. Let it cool completely before serving.
