Ingredients

  • 1 pound red-skin peanuts, raw
  • 8 ounces smoked bacon, diced
  • 1 cup diced onion
  • 1/4 cup crushed garlic
  • 1/2 cup sorghum molasses
  • 1/4 cup chile sauce
  • 1/4 cup Dijon mustard
  • 1 teaspoon black pepper
  • 1 teaspoon ground clove
  • 1/4 teaspoon ground allspice

Instructions

  1. Preheat the oven to 350 degrees F. Combine the peanuts and 12 cups water in a large pot. Bring to a boil, then reduce to a low simmer. Cook until the peanuts are soft, 2 to 3 hours. Add the bacon, onions and garlic to a saute pan over medium heat. Cook until caramelized, about 15 minutes. Add the bacon mixture to the boiled peanuts in the pot. Stir in the molasses, chile sauce, Dijon, pepper, clove and allspice and mix evenly. Transfer to a baking dish. Cover the baking dish with aluminum foil and bake for 1 hour. Remove the foil and bake for an additional 25 minutes. Remove from the oven and keep warm.
