A play on oatmeal raisin cookies, replacing the raisins with scotchies (butter scotch chips).
Ingredients
1 cup butterscotch baking chips
14 tbsp butter
3/4 cup brown sugar
1/2 cup sugar
2 extra large eggs
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 cups oats
Instructions
1. Heat oven to 350 °F (175 °C).
2. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy.
3. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well.
4. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.
5. Bake 8 to 10 minutes or until light golden brown.
6. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely.
7. Store tightly covered.
