Sweet and tangy fresh pineapple is just the thing to perk up this savory skewer, featuring lean chicken breasts and sharp red bell pepper.
Ingredients
1 1/2 lb. boneless, skinless chicken breasts
1 red bell pepper
8 oz. fresh pineapple
2 tbsp. olive oil
Kosher salt and pepper
Instructions
Heat grill to medium-high. In a large bowl, toss the chicken, pepper, pineapple, oil and 1/2 tsp each salt and pepper and thread onto skewers.
Grill, turning occasionally, until the chicken is cooked through, 8 to 10 minutes.
