Ingredients
- 2 cloves garlic
- 1/2 c. peanut butter
- 1/4 c. soy sauce
- 1/4 c. water
- 2 tbsp. honey
- Juice of 1 lemon
- kosher salt
- Freshly ground black pepper
- 1 tbsp. vegetable oil
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 1 red onion, thinly sliced
- 1 head broccoli, florets only
- 2 c. green beans, trimmed
- 2 c. carrots, sliced into half moons
- 1 pkg. cooked soba noodles
Instructions
- In a medium bowl, combine garlic, peanut butter, soy sauce, water, honey, and lemon juice and whisk until smooth. Season with salt and pepper.
- Heat a large skillet over medium-high heat and add vegetable oil. Cook onions, carrots, broccoli, peppers, and green beans until tender but still vibrant, about 10 minutes.
- To skillet, add cooked soba noodles and stir to combine. Serve!
