Recipe by Vera Kaltinick An incredibly smooth, creamy chocolate pudding.

Ingredients

  • 1 lb. organic silken tofu
  • 1/2 tsp. organic ground cinnamon
  • 1/2 tsp. organic vanilla extract
  • 1/4 tsp. organic ancho chile powder
  • 7 oz. organic bittersweet chocolate
  • 3/4 c. simple sugar syrup (1 cup water and 1 cup organic evaporated cane juice crystals boiled together and chilled)
  • 4 tbsp. organic plain low-fat yogurt
  • 2 tbsp. organic bittersweet chocolate

Instructions

  1. Place the tofu in a blender or food processor. Add the cinnamon, vanilla, and chile. Add the cooled chocolate and cooled syrup and blend until smooth. Pour the pudding into your glassware and chill.
  2. Garnish with a dollop of plain yogurt, bittersweet chocolate shavings, and a sprinkle of ancho chili powder (optional).
