Ingredients
- 1 tbsp. oil
- 1 onion, chopped
- 1 stalk celery, chopped
- 1 clove garlic, chopped
- 6 c. low-sodium chicken broth
- 1 15-oz. can hominy, rinsed
- 2 1/2 c. cooked shredded white-meat chicken
- 1 tbsp. chopped chipotles in adobo
- Chopped tomato, for serving
- Chopped avocado, for serving
- Chopped cilantro, for serving
Instructions
- Heat the oil in a pot over medium heat. Add the onion and celery and cook, covered, stirring occasionally, until tender, about 5 minutes. Stir in the garlic and cook 1 minute.
- Add the chicken broth, hominy, chicken and chipotles and bring to a simmer. Top with tomatoes, avocado and cilantro, if desired.
