Recipe by Robin Bashinsky Pour a homemade dressing of ricotta cheese, buttermilk, lemon rind, lemon juice, and honey over carrot ribbons to make this simply delicious salad.

Ingredients

  • 1 cup part-skim ricotta cheese
  • 1/4 cup low-fat buttermilk
  • 1 1/2 teaspoons grated lemon rind
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 1 1/2 teaspoons dried lavender
  • 1/2 teaspoon kosher salt
  • 8 cups peeled shaved carrot
  • Garnish: parsley leaves

Instructions

  1. Combine ricotta cheese, buttermilk, lemon rind, lemon juice, and honey in a blender. Blend on HIGH for 1 minute. Stir in lavender and salt. Pour dressing over carrot; toss. Chill 30 minutes. Garnish with a few parsley leaves, if desired.
